L\u2019histoire de la fermentation commence de 10 000 ans avant J.C. et continue de nos jours. Au cours de sa recherche pour ma\u00eetriser ces processus naturels, l\u2019Homme a r\u00e9ussi \u00e0 en identifier les \u00ab chefs d\u2019orchestre \u00bb : les micro-organismes.<\/p>\n\n\n\n<p>Bien qu\u2019ils restent peu connus, ces micro-organismes et les principales r\u00e9actions biologiques qu\u2019ils mettent en \u0153uvre sont utiles \u00e0 notre alimentation et b\u00e9n\u00e9fiques pour notre sant\u00e9. Certains micro-organismes, dits \u00ab ferments \u00bb, permettent la production d\u2019ar\u00f4mes ou nous sont utiles pour lutter contre l\u2019installation de bact\u00e9ries pathog\u00e8nes. Les micro-organismes dits \u00ab probiotiques \u00bb ont la capacit\u00e9 d\u2019interagir avec notre syst\u00e8me immunitaire ou m\u00eame notre cerveau. Certains peuvent aussi \u00eatre \u00e0 la fois ferment et probiotique !<\/p>\n\n\n\n<p>Comment diff\u00e9rencier les micro-organismes et de quelle mani\u00e8re sont-ils nos alli\u00e9s ? Comment sommes-nous arriv\u00e9s \u00e0 comprendre leurs r\u00f4les ? A partir de nombreux exemples de notre vie de tous les jours, cette rencontre sera l\u2019occasion de r\u00e9fl\u00e9chir ensemble au sujet des micro-organismes dans le domaine de l\u2019alimentation
