En toile de fond, on trouve d\u2019un c\u00f4t\u00e9 la croissance d\u00e9mographique et l\u2019\u00e9volution des r\u00e9gimes alimentaires, et de l\u2019autre les limites biophysiques du syst\u00e8me terre, \u00e0 commencer par le changement climatique, la limite en terres arables et le bouclage des cycles des nutriments, invitant \u00e0 \u00e9voluer vers une \u00e9conomie circulaire et sans carbone d\u2019origine fossile (ex. p\u00e9trole, gaz naturel).<\/p><p>Parmi les nombreuses approches possibles, les initiatives visant \u00e0 directement transformer la biomasse r\u00e9siduelle (r\u00e9sidus forestiers, agricoles, lisiers, d\u00e9chets verts, d\u00e9chets alimentaires, etc.) en ingr\u00e9dients pour l\u2019alimentation humaine et animale (aussi bien prot\u00e9ines que fibres ou micronutriments) se multiplient. Parfois appliqu\u00e9es \u00e0 des probl\u00e9matiques sp\u00e9cifiques (voyages spatiaux, s\u00e9curit\u00e9 alimentaire en temps de guerre), ces initiatives mettent d\u00e9sormais souvent en avant des arguments \u00e9cologiques pour promouvoir leur d\u00e9ploiement, s\u2019inscrivant dans le concept de bio\u00e9conomie. Appartenant \u00e0 des secteurs aussi divers que l\u2019\u00e9levage d\u2019insectes, les biotechnologies ou le raffinage, ces fili\u00e8res seront amen\u00e9es \u00e0 interagir ensemble mais aussi parfois \u00e0 entrer en conflit pour les m\u00eames ressources.<\/p><p>Pour stimuler les r\u00e9flexions portant sur l\u2019usage en cascades de ressources et faciliter la comparaison entre diff\u00e9rentes chaines de valeurs, des chercheuses et chercheurs du TBI ont \u00e9tudi\u00e9, document\u00e9 et mis en regard plus de 950 sources proposant l\u2019\u00e9laboration d\u2019ingr\u00e9dients sans passer par l\u2019agronomie. L\u2019\u00e9tude s\u2019attache \u00e0 couvrir toute la gamme de TRL<sup>*<\/sup>, et s\u2019appuie sur la litt\u00e9rature tant scientifique qu\u2019industrielle. Les r\u00e9sultats sont publi\u00e9s dans la revue\u00a0<em>Biotechnology Advances<\/em>.<\/p><p>Pour ce faire, l\u2019\u00e9quipe a diss\u00e9qu\u00e9 chaque voie de valorisation transformant une biomasse r\u00e9siduelle donn\u00e9e en un aliment aux fonctions nutritionnelles sp\u00e9cifiques, pour en identifier les op\u00e9rations unitaires. Par cette approche multidisciplinaire, l\u2019\u00e9quipe propose de lier l\u2019intensit\u00e9 et le nombre d\u2019op\u00e9rations unitaires requises \u00e0 la distance entre les propri\u00e9t\u00e9s initiales de l\u2019intrant et celles du service nutritionnel vis\u00e9. Une synth\u00e8se des 8 grandes familles de conversion a \u00e9t\u00e9 d\u00e9gag\u00e9e (figure).<\/p><p>D\u00e9sormais, l\u2019\u00e9quipe vise \u00e0 quantifier la pertinence environnementale de ces voies de valorisation \u00e9mergentes, afin de les comparer entrer elles, mais surtout d\u2019appr\u00e9cier sous quelles conditions celles-ci peuvent accompagner la France dans sa transition vers
