Ce projet permettra de d\u00e9finir les combinaisons optimales entre micro-organismes et conditions de fermentation pour mieux r\u00e9pondre aux besoins des industriels et aux attentes des consommateurs.<\/b><\/p>\n<p><b>A mi-parcours, MetaPath vient de franchir une \u00e9tape significative dans son ex\u00e9cution\u202f: la validation des m\u00e9thodes d\u2019analyses omiques et le d\u00e9veloppement d\u2019une premi\u00e8re version fonctionnelle du logiciel permettant la reconstruction des r\u00e9seaux m\u00e9taboliques en jeu dans la production de mol\u00e9cules d\u2019int\u00e9r\u00eat.<\/b><\/p>\n<h2>\u00a0<\/h2>\n<h2><b>Un partenariat pour acc\u00e9l\u00e9rer la recherche et l\u2019innovation dans le domaine de la fermentation<\/b><\/h2>\n<p>La prise de conscience de l\u2019impact de l\u2019alimentation sur la sant\u00e9 et l\u2019environnement g\u00e9n\u00e8rent chez les consommateurs de nouvelles attentes. Ainsi, ils se tournent davantage vers des aliments naturels, sains et \u00e9co-responsables, mais pas moins savoureux et accessibles. La fermentation, parce qu\u2019elle est naturelle et offre un champ des possibles tr\u00e8s large, ouvre de formidables opportunit\u00e9s pour r\u00e9pondre \u00e0 ces attentes. L\u2019objectif du projet MetaPath est de d\u00e9velopper une solution qui permettra de d\u00e9crire, pr\u00e9dire et maitriser les consortiums microbiens pour acc\u00e9l\u00e9rer la conception de nouveaux produits alimentaires ferment\u00e9s aux qualit\u00e9s sensorielles et de conservation am\u00e9lior\u00e9e.<\/p>\n<p>L\u2019ensemble des m\u00e9thodes, strat\u00e9gies exp\u00e9rimentales et donn\u00e9es g\u00e9n\u00e9r\u00e9es pendant ce projet pourront \u00e9galement contribuer \u00e0 r\u00e9v\u00e9ler le potentiel infini des consortiums microbiens responsables de la fermentation.<\/p>\n<p><span data-contrast=\"auto\">La premi\u00e8re \u00e9tape de ce projet a \u00e9t\u00e9 le d\u00e9veloppement et la validation de m\u00e9thodes d\u2019analyses des \u00e9cosyst\u00e8mes sp\u00e9cifiques pour g\u00e9n\u00e9rer des donn\u00e9es qui sont \u00e0 la base de la reconstruction des r\u00e9seaux m\u00e9taboliques. Ainsi, Bel et Lesaffre ont d\u00e9velopp\u00e9 les m\u00e9thodes de m\u00e9tag\u00e9nomique ou g\u00e9nomique, m\u00e9tatranscriptomique et volatilomique appliqu\u00e9es au levain (pour Lesaffre) et au fromage (pour Bel). MetaToul a quant \u00e0 lui d\u00e9velopp\u00e9 des m\u00e9thodes d\u2019analyse m\u00e9tabolomiques pour ces 2 m\u00eames applications. En parall\u00e8le, Abolis Biotechnologies, par l\u2019interm\u00e9diaire de sa division Microbiome Studio, a b\u00e2ti le socle technique du logiciel et d\u00e9velopp\u00e9 les algorithmes n\u00e9cessaires pour traiter les donn\u00e9es omiques qui serviront \u00e0 reconstruire les r\u00e9seaux m\u00e9taboliques puis \u00e0 les mod\u00e9liser. Cette solution permettra notamment d\u2019utiliser les informations compl\u00e9mentaires issues de ces diff\u00e9rentes donn\u00e9es pour reconstruire les r\u00e9seaux m\u00e9taboliques fiables, alors que les outils actuels analysent ces donn\u00e9es de mani\u00e8re individuelle.\u00a0<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335551550&quot;:6,&quot;335551620&quot;:6,&quot;335559739&quot;:160,&quot;335559740&quot;:240}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Pour les prochaines \u00e9tapes, Bel, Metatoul et Lesaffre fourniront les donn\u00e9es relatives \u00e0 chaque application.
