certaines conditions de culture, d&#8217;accumuler de grandes quantit\u00e9s de lipides qui peuvent \u00eatre utilis\u00e9s pour produire des biocarburants. Notre groupe en collaboration avec le LAAS-CNRS a \u00e9tudi\u00e9 la floculation des microalgues, qui consiste \u00e0 agr\u00e9ger les cellules avec un agent floculant afin de les s\u00e9parer plus facilement. Il s&#8217;agit d&#8217;un processus de r\u00e9colte courant, mais ses m\u00e9canismes \u00e9taient encore mal compris. Ces exp\u00e9riences fournissent des informations pr\u00e9cieuses sur la structure dynamique de la macromol\u00e9cule, comme son \u00e9lasticit\u00e9, mais aussi sa conformation lorsqu&#8217;elle est soumise \u00e0 une force de l&#8217;ordre du picoNewton (1 millioni\u00e8me de Newton). Notre groupe, en collaboration avec l&#8217;Institut MICALIS (INRAE, Jouy-en-Josas), a \u00e9tudi\u00e9 la structure du pilus (pluriel : pili) &#8211; une prot\u00e9ine s\u00e9cr\u00e9t\u00e9e \u00e0 la surface d&#8217;une bact\u00e9rie et impliqu\u00e9e dans l&#8217;adh\u00e9sion \u00e0 une surface &#8211; produit par Lactococcus lactis. Cette bact\u00e9rie, pr\u00e9sente principalement dans l&#8217;environnement laitier, a la capacit\u00e9 de former des communaut\u00e9s appel\u00e9es biofilms. La formation de biofilms rencontr\u00e9s dans l&#8217;industrie alimentaire est un v\u00e9ritable enjeu soci\u00e9tal pour la s\u00e9curit\u00e9 alimentaire. Pour r\u00e9pondre \u00e0 cette question, une instrumentation \u00e0 pinces optiques a \u00e9t\u00e9 d\u00e9velopp\u00e9e \u00e0 TBI et permet de manipuler le micron (1 millioni\u00e8me de m\u00e8tre)
