r\u00e9sonance magn\u00e9tique nucl\u00e9aire (RMN) comme m\u00e9thode analytique pour \u00e9lucider (1) l&#8217;\u00e9volution dynamique des r\u00e9seaux m\u00e9taboliques et (2) le fonctionnement m\u00e9canistique des enzymes. Nous d\u00e9veloppons une nouvelle m\u00e9thodologie pour identifier et quantifier les r\u00e9seaux de r\u00e9actions biochimiques dans des extraits cellulaires, notamment de micro-organismes ayant une application biotechnique. En ce qui concerne les \u00e9tudes enzymatiques, nous nous int\u00e9ressons principalement aux enzymes de d\u00e9gradation qui op\u00e8rent \u00e0 la surface de polym\u00e8res
