data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Cet axe concerne <strong>la compr\u00e9hension de la physiologie et des interactions microbiennes<\/strong> pour <strong>les aliments fonctionnels et la biotechnologie industrielle<\/strong>. D\u2019une part, des recherches sont men\u00e9es sur le d\u00e9veloppement de \u00ab\u00a0Single-Cell Proteins \u00bb d\u2019origine levurienne (majoritairement <em>non-Saccharomyces<\/em>) et bact\u00e9rienne comme source de prot\u00e9ines alimentaires et d\u00e9riv\u00e9s, en mobilisant une forte composante en physiologie microbienne et en g\u00e9nie microbiologique. Ce premier champ de recherche poss\u00e8de une dimension \u00ab\u00a0sant\u00e9\u00a0\u00bb, en visant \u00e0 enrichir les extraits prot\u00e9iques en compos\u00e9s b\u00e9n\u00e9fiques pour la sant\u00e9 humaine en fonction des esp\u00e8ces cultiv\u00e9es et de la conduite des bior\u00e9acteurs. D\u2019autre part, un deuxi\u00e8me angle d\u2019investigation se situe dans la suite de l\u2019axe historique de l\u2019\u00e9quipe \u00ab Structure, biogen\u00e8se et assemblage pari\u00e9tal \u00bb en se focalisant sur les m\u00e9canismes mol\u00e9culaires d\u2019interactions bact\u00e9ries-levures (<em>Saccharomyces<\/em> et <em>non-Saccharomyces<\/em>) qui conf\u00e8rent une part importante des b\u00e9n\u00e9fices sant\u00e9 des postbiotiques et probiotiques levures. Ceci est combin\u00e9 \u00e0 la caract\u00e9risation de leur enveloppe (paroi + membrane), dans un contexte de d\u00e9couverte et caract\u00e9risation d\u2019aliments fonctionnels (postbiotiques et probiotiques). L\u2019\u00e9tude de ces interactions inter-esp\u00e8ces est par ailleurs \u00e9tendue \u00e0 un 3\u00e8me type cellulaire, \u00e0 savoir des cellules intestinales, avec l\u2019id\u00e9e de concevoir une m\u00e9thodologie d\u2019analyse de ces interactions triparties pour mieux simuler in vitro l\u2019environnement intestinal. Par ailleurs, il est envisag\u00e9 de concevoir une ing\u00e9nierie de souches de levures visant \u00e0 modifier sa paroi afin d\u2019am\u00e9liorer ses propri\u00e9t\u00e9s post- ou probiotiques, notamment promouvoir, en agissant sur la perm\u00e9abilit\u00e9 de la paroi, l\u2019externalisation par les levures de petites mol\u00e9cules ou prot\u00e9ines produites pour des applications en France 2030, Investissement d\u2019Avenir \/ Action \u00ab\u00a0Maturation de technologies, RD partenariales, valorisation de la recherche et transfert de technologies\u00a0\u00bb, Appel \u00e0 projet \u00ab\u00a0D\u00e9velopper les prot\u00e9ines v\u00e9g\u00e9tales et diversifier les sources de prot\u00e9ines \u2013 Volet 2 diversification des sources de prot\u00e9ines\u00bb.<\/p><p>Dans le cadre du projet \u00b5O-PROT, il est propos\u00e9 d\u2019\u00e9valuer les potentialit\u00e9s de cette ressource alternative de prot\u00e9ines d\u2019origine microbienne pour l\u2019alimentation humaine par une approche int\u00e9grative consid\u00e9rant en amont les aspects de bioproduction (WP2), de DSP (WP3), de caract\u00e9risations nutritionnelle et toxicologique (WP4), de caract\u00e9risations biochimique et fonctionnelle (WP5), ainsi que les probl\u00e9matiques soci\u00e9tales (WP6) tels que l\u2019impact environnemental, l\u2019\u00e9valuation technico-\u00e9conomique, acceptabilit\u00e9 du consommateur et la r\u00e9glementation. Ce consortium et l&#8217;approche int\u00e9gr\u00e9e syst\u00e9mique propos\u00e9e devraient permettre d&#8217;appr\u00e9hender toutes les \u00e9tapes de la cha\u00eene de d\u00e9veloppement de ce
